Puttu is one of Kerala’s best-loved breakfasts: steamed cylinders of rice flour layered with fresh or grated coconut, usually eaten with kadala curry, banana or payar. The key ingredient is puttu podi, a special coarse rice flour. It is surprisingly hard to find in ordinary UK supermarkets, which is why many people order it online.

How to make puttu at home
-
Put about 1 cup of puttu podi in a bowl with a pinch of salt.
-
Sprinkle in water a little at a time, mixing with your fingers, until the flour feels damp and crumbly. It should hold together when squeezed gently but fall apart when touched.
-
Add a layer of grated coconut at the bottom of a puttu kutti (puttu maker), then a layer of the flour, then coconut again, and repeat until full.
-
Steam for about 5 to 7 minutes, until steam comes out of the top.
-
Push the puttu out gently and serve hot with kadala curry, sugar and banana, or payar thoran.
If you use frozen grated coconut, our Frozen Vegetables range includes it. Plantain and curry leaves are in our fresh section.
Tips for soft puttu
• Do not add too much water. Wet flour makes the puttu heavy. • Let the dampened flour rest for a few minutes before steaming. • Store puttu podi in an airtight container to keep it fresh. Delivery
